Wow, what an exciting story. We have to be honest: After talking to Xavier, we were really blown away. And rightly so: What the hell is a Frenchman thinking coming to China, the country with arguably the best cuisine in the world, with a plan to revolutionise the way they eat and what they eat? Crazy, but from the craziest ideas come the best stories and the most important lessons. 

We definitely learnt a lot from Xavier. He founded Creative Food, a major supplier for big restaurant chains in China like McDonalds, KFC and Starbucks. He grew the company into an organisation with 9 factories supplying 6,500 restaurants a day and a turnover of 150 million dollars. 

He also wrote a book about it: The Lettuce Diaries, a business memoir about his years as CEO of a food company in China.

So far so good, but we'll let Xavier tell the rest himself. Let the conversation melt in your mouth, especially the next time you bite into a Big Mac. Let's go!
